Lemon Strawberry One Minute Mug Cake

Add the butter and lemon curd to a large Ramekin. Microwave for approx 30 seconds or until just melted. Stir with a fork to mix well. Add in the beaten egg and mix well. Add the remaining ingredients (Except the lemon juice and swerve) Mix until well blended. Microwave for 60 seconds. Allow to cool on the counter. In a separate small bowl mix the lemon juice and swerve. Then prepare your whipped topping frosting. When the cake is cooled. Remove it from the dish and slice it in half. Poke holes in each half with the fork. Spoon the lemon juice and swerve over each half in equal amounts. Allow a few minutes for it to be absorbed into the cake.

Refrigerate for 10-15 min.
Slice into 2 servings, and serve.

  1. Hi Joy!
I wanted to try your Lemon Strawberry One Minute Mug Cake, but I need to know for the clabber girl are you using baking soda or baking powder?
Also if you can tell me where do you get the lemon curd from?
    Thanks so much,
    Kerri
