Lemon Strawberry One Minute Mug Cake 


You’re on the sofa, snuggled up with your love, and a soft blanket, watching  a movie…suddenly, you have a craving for something sweet, but you know you can’t have the ice cream or the oreos….the carbs will TOTALLY throw your body out of ketosis, and destroy your hard work and progress. 

But…with just a couple of minutes of prep time and ONE MINUTE of cook time, you can have a keto diet acceptable snack that’s just plain HEAVENLY and stiffles your sweet tooth. Before you know it you’ll be back to snuggling and unpausing the Netflix movie and enjoying this sweetness!

Lemon Strawberry One Minute Mug Cake 


Add the butter and lemon curd to a large Ramekin. Microwave for approx 30 seconds or until just melted. Stir with a fork to mix well. Add in the beaten egg and mix well. Add the remaining ingredients (Except the lemon juice and swerve) Mix until well blended. Microwave for 60 seconds. Allow to cool on the counter. In a separate small bowl mix the lemon juice and swerve. Then prepare your whipped topping frosting. When the cake is cooled. Remove it from the dish and slice it in half. Poke holes in each half with the fork. Spoon the lemon juice and swerve over each half in equal amounts. Allow a few minutes for it to be absorbed into the cake. 

Layer in this order:

Cake, whipped frosting, strawberries, cake, whipped frosting, strawberries, a dollop of whip and a strawberry on top! 

Refrigerate for 10-15 min. 
Slice into 2 servings, and serve.
