Crackers are fantastic aren’t they? Topped with cheese, veggies, meats, and dips.
I can’t tell you how many triscuits (20 carbs/9 crackers) ritz (10 carbs/5 crackers) or wheat thins (22 carbs/16 crackers) I’ve consumed in my lifetime. I am a cracker loving girl after all!
So THIS recipe….this has been my banting miracle! And the best part is, they couldn’t be any simpler or any more versatile! Start off with the base recipe and add different ingredients and spices to make different taste combinations! I’ve added a few flavor combinations at the end of the basic recipe, but you can obviously try any combination you like. If you have an idea for a tasty combo please reply and share!
BASIC seed cracker recipe
Preheat oven to 350* Line your cookie sheet with parchment paper.
1 1/2 Tbsp. Psyllium Husk
1 cup water
Combine these two ingredients in a bowl, allow it to sit for 5 min and thicken.
Add the seeds/nuts, you can use any combination you’d like but here is what I use:
1/3 cup dry roasted sunflower seeds
1/3 cup flax seeds (golden or dark)
1/4 cup sesame seeds
3/4 cup pumpkin seeds
3 Tbsp poppy seeds
1 handful of crushed almonds
Add the seed/nuts to the psyllium husk mixture and stir until well combined.
You can make little piles of the mixture on your cookie sheet which you will then use the spoon to flatten as flat as possible OR you can make one large pile in the center of your cookie sheet which you will also flatten out as much as possible. If you make individual piles you will have shaped crackers, if you make one large cracker, you can simply break it up when it’s cool. I have done both, sometimes I’m quite lazy and want to take the easy way out (one large cracker) other times I’m quite creative and will shape my crackers like little hearts. The shape is entirely up to you! Remember: The key to a crispy tasty cracker is getting the cracker smoothed out as thin as you possibly can.
Bake for 75 minutes. Allow to cool & ENJOY!
Flavor Changes:
You can add strongly flavored seeds such as celery, fennel or cumin seed for a more spicy flavored cracker, simply add the amount of seed you want to the above recipe, keep in mind that these seeds are strong so you probably won’t want to add too much, I would suggest you start with 2 tsp.
Pumpkin Spice Seed Crackers: Add the following ingredients to the above BASIC recipe. 3 Tbsp. Canned Pumpkin Puree, 2 Tbsp Ground Cinnamon, 1 Tsp. Ground Nutmeg, 1 Tsp. Ground Ginger, 1/2 Tsp Ground Cloves 2 Tbsp. Xylitol
Buttered Seed Cracker: Add the following ingredients to the above BASIC recipe. 4 Tbsp butter melted (I use Kerrygold) 1 1/2 Tsp Sea Salt, 1/2 Tsp. Pepper.
Chocolate Peanut Butter Seed Crackers: Add the following ingredients to the above BASIC recipe. 1 Tbsp Herseys Cocoa Powder, 2 Tbsp. Xylitol, 2 Tbsp. Powdered Peanut Butter (I use PB2).
