Lemon. It brings so many thoughts and words to my mind. Crisp, Tart, Cool, Fresh, Flavorful, Sweet, Fruity, Citrus, Pretty, Juicy, Zing. These are just a handful of the adjectives to describe “Lemon”. But, there really are NO words to describe lemon in baking…no words for the flavor explosion that lemon gives you when you pop it into your mouth. Instead of looking for words to describe it, you just sit back and enjoy it! Having said that, I present…Sugar-Free Coconut Lemon Cake in a Cup.
Ingredients:
1 egg (beaten)
1 Tbsp Soft Butter or Coconut Oil
1/2 Tsp Lemon Extract
1/4 Tsp pure vanilla extract
1 Tbsp Cream
2 Tsp ACV
3 Tbsp Water
2 Tbsp Coconut Flour
2 Tbsp unsweetened coconut
2 Tbsp Xylitol
1 Tsp baking soda
Directions:
Preheat the oven to 350*
Choose an oven safe mug, stir in the butter/coconut oil in the bottom of the mug till emulsified, then add the egg and beat it. Add the dry ingredients, then all of the other wet ingredients. Mix until it is brownie batter consistency. (If too dry and add a tiny bit more water)
Bake for 15 minutes or until it passes the toothpick test.
Frosting:
2 Tbsp. Cream Cheese (softened)
1 Tbsp Butter (softened)
1 Tbsp. Xylitol
2 Tbsp Heavy Whipping Cream
1 Tbsp HOT water
Mix well and spoon over the cooled cake, top with a little toasted coconut, and some lemon zest, serve immediately.
